Let's face it, cauliflower is not a favorite with my kids. We've typically eaten in a salad with broccoli and sugared, dried cranberries, covered in Mayo. So given our challenge to cut dairy and sugar, we had to be creative with cauliflower.
First we roasted it with olive oil, garlic powder and sea salt. The kids wrinkled their noses but ultimately had to admit it was tasty.
Second we added to the leftovers a frozen bag of cauliflower and blended them with a half cup of coconut milk to make cauli-mashed potatoes (there are no potatoes at all, just a resemblance). My mistake here was letting them get too cold before serving. The adults thought they were great. Kids still need to warm to the idea.
I'll continue my experiments with cauliflower over the summer. Any ideas?
